The Steep 24 Hours
Yield: 24 oz.
Fall Flavors Infusion is the perfect recipe to evoke fond memories, whether you are celebrating fall or just want to recall costume parties and comfort foods. The recipe uses spices, cranberries, and apples to produce what could be called “the official flavor of autumn”.
Ingredients
- ¾ cup chopped Granny Smith apples
- ¾ cup chopped Red Delicious apples
- ¾ cup chopped cranberries
- 2 allspice berries
- Cloves, 2 cloves
- Cinnamon stick
- 10 oz. Everclear
- 10 oz. Filtered water
- 4 oz. 4 oz.
Directions
- Chop cranberries and apples with a food processor or knife, then measure ¾ cup of each.
- In a large sealable container, combine chopped fruit and Everclear with allspices, cloves, and cinnamon.
- Shake the shaker thoroughly.
- Allow to steep for 24 hours in a dark, cool place.
- Remove all solids using a coffee filter or fine-mesh strainer.
- Simple syrup and water can be added.
- Pour stir, pour bottle and enjoy.
Tips: Although fresh cranberries taste best, they can also be frozen in an emergency or when out-of-season.

Harvest Spice Infusion

Yield: ~500ml
The cornucopia is full of fall flavors. It’s not autumn without some harvest spices.
Ingredients
Directions
- Mix all ingredients together in a mason jar.
- Store in the refrigerator for two weeks. Shake it occasionally.
- Tip: Put ingredients into a bag of spices for easier removal

Pears in Sweet Preserved

The Steep: Four Weeks
Yield:Â 1 qt
This sweet recipe will extend the pear season throughout the year. This recipe is based on the German “rumptof” fruit preservation tradition. It gives the resultant pears a richer flavor due to dried fruits and the vanilla. They are a great complement to baked goods and ice-cream.
Ingredients
- 2 lbs. Pears (split in half, cored and peeled)
- ½ lb. Dried fruit, such as prunes, apricots or peaches
- 2 ¼ c. white sugar
- 1 vanilla bean (cut in half)
- Peel of one orange, with all the pith removed
- 1 ½-2 c. Everclear
Directions
- In a mason jar of 1 quart, alternately layer the dried fruits and orange peel pieces with the pears. Add in vanilla bean.
- Heat the pot and add sugar. Add just enough water (about 1/4-1/2 c.). Stir the sugar until it is completely dissolved (about 5 minutes). Let the mixture cool a bit and remove from heat.
- Sprinkle sugar over pears. Add Everclear until the mason-jar is full. Closing tightly.
- Mason jars should be kept in a cool and dark area for at least a month. In a month, you can enjoy pears.

Pumpkin Spice Shake
The fall season is not complete without this delicious beverage. Mix it up by shaking this boozy concoction.
Ingredients
- ½ oz. Harvest spice infusion
- 3-4 scoops vanilla ice cream
- 2 tbsp. Pumpkin puree
- ½ c. milk or milk alternative
- Whipping Cream
- Use ground nutmeg as a garnish
Directions
- Place the Harvest Spice Infusion in a blender with the ice-cream, pureed pumpkin, and milk. Process until smooth.
- Pour into glass.
- Add freshly grated nutmeg and whipped cream to the top.
