The fruit and nuts cups are a great way to start your day.


The CBD- and THC infused energy bites provide a convenient, healthy way to consume cannabis. With a combination of nuts, seeds and fruits, these energy bites provide long-lasting power along with an infused dose coconut oil. You can customize this cannabis recipe to meet your specific needs, whether it’s a CBD-only snack or an edible with more THC.

It’s important to review a Guide to Edibles if you are new to infusing foods. This will help you understand the dosing and onset times, as well as how cannabinoids impact your body.

The fruit and nuts cups baked in a muffin pan will satisfy your craving for crunch. They’re packed with nutrients and are perfect as a snack, pre-workout energy, or for taking along on a walk in the forest. Honey is the only thing that makes them not vegan. Vegans can easily substitute brown rice syrup or agave instead — though brown rice syrup is less sweet than honey and agave is more sweet, so adjust accordingly.

I recommend making coconut oil infused with Bruce Banner, one of my current favorite strains, to use in this recipe. Bruce Banner’s high is long-lasting, and it encourages productivity. If you don’t want to get high, these energy bites are also available with CBD-infused Coconut Oil. As with all edibles, it’s best only to consume if you are aware of the dose that is right for you—as well as the THC:CBD ratio you prefer.

INGREDIENTS

Serves 24

  • 1 1/4 cup almonds
  • Coconut flakes – 1/3 cup
  • 1/2 cup dried cherries
  • 1/2 cup crisped rice cereal
  • Two tablespoons of hemp seeds
  • Use 1 tablespoon of turmeric
  • 1/3 – 1/2 cup honey (adjust for desired sweetness)
  • 3 – 4 tablespoons infused coconut oil
  • Vanilla extract 2 teaspoons

Directions

  1. Heat oven to 325° F. Line a 24-cup mini-muffin tray with un-infused canola or coconut oil and set aside.
  2. Put the coconut and almonds on a baking sheet with sides. The coconut should be browned, which takes 7-10 mins. As oven temperatures fluctuate, you should check the coconut after every 5 minutes. Let the oven cool.
  3. Put the almonds, coconut and dried cherries in the food processor bowl. To chop some of the ingredients, pulse two to three times.
  4. Combine the almonds, cherries, and coconut in a large mixing bowl with the hemp seeds, turmeric, and crisped up rice cereal. Stir well to ensure that the mixture is distributed evenly.
  5. Combine the oil and honey in a bowl that can be heated up using a micro-wave. Stir and heat for an extra minute. Add the vanilla. The honey will be infused with vanilla.
  6. Pour the mixture quickly into the cups of each mini-muffin tray. The mixture can be pressed down with fingers lightly oil (with regular un-infused olive oil).
  7. Bake 15 minutes.
  8. Remove the bites from the pan after they have cooled completely. Run a knife along the edges if they are stuck. Once cooled completely, they should easily come out.

Dosing Cannabis Edibles in a Safe Way

Start with a low dose (2.5–5 mg THC) if you’re new to edibles, and wait at least 60–90 minutes before consuming more. CBD-only edibles can be eaten more freely but still, it is best to start out with a small amount of CBD and gradually increase the dosage.
